Apple Mail is OK, but I’ve sent emails from the wrong account because Mail chose the sender on my behalf. I need to be more in charge. This tip helps:
select a ‘dummy’ account for the default ‘from’ account, then disable that account

@Munish I only just found it today — hoping it does what I need. Also, the original source had a link to send feedback on Mail to Apple. I also did that.
